Abstract
Mycotoxins are a diverse group of toxic secondary metabolites,which are produced by mold and found in a wide range of food. It is one of the important risk factors for dietary quality and safety,which is a serious threat to the health of human beings and animals. This paper systematically discusses the toxicity and exposure of several major mycotoxins in Asia,Europe and America,which points out that there may be risks in the diet of aflatoxins,ochratoxins and deoxynivalenol in Asia. And aflatoxins and deoxynivalenol are found in Europe and America. It should be paid more attention to aflatoxins and deoxynivalenol on dietary in Asia,Europe and America. By comparison,it is found that the risk of mycotoxin exposure in Europe and America is lower than that in Asia.
