Abstract
The aptamer is an oligonucleotide fragment(single-stranded DNA/RNA sequence)which can specifically recognize and bind to target molecules by screening in vitro. It has the obvious advantages of high specificity and sensitivity,high affinity and simplicity of modification,and has been applied in the field of foodborne pathogenic bacteria detection. The classification of aptamer screening technologies and nanogold aptamer technology,fluorescence aptamer technology,electrochemical aptamer technology,flow cytometry technology and surface enhanced Raman aptamer technology in the detection of foodborne pathogenic bacteria were mainly reviewed.
