Optimizing germination pretreatment conditions for extraction of soy oil and protein by aqueous enzymatic method

  • Germination pretreatment was used to assist extraction of soy oil and protein by aqueous enzymatic method. The optimal condition of germination pretreatment condition was determined as follows: germination temperature 26 ℃,71%humidity,43 h pretreatment time.The oil and protein extraction rate were 92.42% and 91.91% under the optimal condition.Germination pretreatment could significantly increase the oil and protein extraction rate by aqueous enzymatic method,this pretreatment had a better treatment effect than grinding and ultrasonic treatement.
