Study on stability of fucoxanthin in oil and aqueous model system

Abstract
The effects of heating,antioxidants and gas environments on the stability of fucoxanthin in the oil and aqueous model system were investigated,and the degradation kinetics models of fucoxanthin were analyzed. The results showed that fucoxanthin was more stable in oil system than that in aqueous system,and fucoxanthin was relatively stable at low temperature storage. The degradation of fucoxanthin was promoted by the increase of heating temperature.In the aqueous model system,treated using three hydrophilic antioxidants,the effects of retard of degradation in descending order were as follows: sodium phytate > tea polyphenols > vitamin C. In the oil system,treated using five hydrophobic antioxidants,the effects of retard of degradation in descending order were as follows: tert- butyl hydroquinone > butylated hydroxy anisole > vitamin E > butylated hydroxytoluene > propyl gallate.In addition,the oxygen promoted the degradation of fucoxanthin,and the nitrogen could achieve preferable storage effect.The degradation of fucoxanthin was found to follow first- order kinetics under above- mentioned conditions through degradation kinetic analysis.
