Neopullulanase ( nPU, EC 3.2.1.135) is one of the multifunctional complex type of amylase.Firstly, this review discussed the structure and properties of neopullulanase as well as the mechanism in starch hydrolysis and transglycosylation.Secondly, the taxonomic status of neopullulanase in α-amylase family 13 and its adhibition in food industry are elaborated.Finally, its important value of research and the prospect of application were forecasted.
