Abstract
Mortierella alpina can produce polyunsaturated fatty acids, such as Arachidonic acid etc. Mortierella alpina could be employed for industrial production due to its high production rate and flexible operation.Furthermore, it was considered as a GRAS organism. The research development was introduced for fermentation condition of Mortierella alpina and the effects of carbon, nitrogen, dissolved oxygen etc were especially emphasized.
