Study on extraction of corn germ protein by two-step enzymatic method

  • In order to investigate gentler and more efficient corn germ protein extraction method, the corn germ protein was extracted from corn germ by the two-step enzymatic method ( cellulase and alkaline protease) .Single factor experiments and orthogonal experiments were performed to optimize the extraction processing parameters. The results showed that, the optimum conditions for cellulase processing were as follows: pH4.5, reaction time 2.5h and enzyme dosage 0.3% ( W/V) .The optimum conditions of alkaline protease processing were as follows: pH 9.0, reaction time 3h and enzyme dosage 4% ( V/V) . Under the optimum conditions, the extraction rate of corn germ protein was 83.7% ± 1.2%.
