Advances in study on improving the catalytic properties of lipase by chemical modification and applying in food industry

  • The techniques of chemical modification are effective method to improve enzymatic properties.This paper reviewed the modification of the lipase molecule in different locations ( main chain and side chain groups) , and the effect of activity, thermal stability and specifity of lipase by using different modifiers such as macromolecular polymers or micromolecular anhydride.By exploring the change of enzymatic properties, to seek the most suitable for the industrial production of modified lipase. This article described the application of lipase in dairy and oil processing industry.
