The research actuality and development trend of non-thermal photosensitization in food
As a new method of non-thermal sterilization, photosensitization achieves the purpose of sterilization by damaging cell membrane, making the enzyme inactive and destroying the structure of DNA. The detail of photosensitization and its research actuality and application in food were reviewed.
