Study on the newly functional foods of Se-enriched germinating brown rice

The functional properties of germinating brown rice and Se-enriched germinating brown rice were introduced in this paper.Biological function of selenium (Se) , progress of Se biotransformation, characteristic and a review of Se-enriched germinating brown rice were also summarized .Meanwhile, some problems of Se-enriched germinating brown rice development were introduced, and its application outlook was illustrated as well .
