Research progress in enzyme biosensors for nitrite determination

Nitrite in food and drinking water is very harmful to human health. By virtue of detecting nitrite content quickly and accurately, the biosensor based on nitrite reductase has received considerable attention in recent years. The structure and principle of the biosensor using nitrite reducting enzymes as biorecognition were introduced in this article, and the current state in this field had also been reviewed.
