  • With the continuous improvement of living standards, pork is one of common diet food, its quality directly affects people health, therefore the integration evaluation of pork quality grade is particularly important. According to consumer requirements, the main factors affecting pork quality grade were analyzed, the security quality and the edible quality and meat freshness and sanitation quality were introduced to establish the grade layer structure of integration evaluation of pork quality. According to matter element analysis theory and its main characteristics, the paper applied the grade classification of indicator system, membership confirmation, matter element analysis establishment and correlation function calculation to actualize the evaluation model of pork quality grade. The pork quality of certain market pork was evaluated as the fact examples, the results showed that the pork quality was in better condition and answered for the actual complexion;the evaluation method realized the integration evaluation of the pork quality of consumer attention and had important guidance significance to pork production process.
