Abstract
The consumption of fresh fruits and vegetables is increasing. In order to ensure the safety of postharvest fruits and vegetables, researchers paid more attention to the ultrasound. The mechanism of ultrasounic technology applying in fruits and vegetables was introduced. Then the effects of ultrasound on the pathogenic bacteria, viruses, pesticide residues and cleanliness were summarized. Finally, the prospect of ultrasonic technology in fruits and vegetables was forecast.
