Advances on benzene propane metabolism of fresh-cut fruits and vegetables

  • Cutting makes quality of fresh fruits and vegetables get slower rapidly because the physiological metabolism is disordered.Simultaneously, body of fruits and vegetables' makes positive response and defenses the mechanical stress by inducing the risen of relative enzyme activity of benzene propane metabolic pathways and the accumulation of secondary metabolite including polyphenol, flavone and lignin.This paper was intended to summarize the key enzymes change of metabolism and important secondary metabolites.Then the positive influence of cutting on fruits and vegetables' benzene propane metabolism was discussed.
