Progress of Collagen-based Materials and Its Rheological Properties

摘要: 胶原基材料是以胶原为基质的一类新型材料,因其优良的性能被广泛应用于生物医学、食品、美容化妆等产业。在胶原基材料的生产过程中,流变性能是评价其能否制备的重要指标,对胶原基材料流变性能的研究是其规模产业化应用的关键。本文综述了交联剂、温度、浓度、pH、超声波等因素对胶原基材料流变性能的影响,并总结了胶原基材料流变性能动力学模型的研究进展,最后介绍了胶原基材料在食品领域的应用及其发展前景,为胶原基材料的应用提供一定的理论指导和技术支撑。Abstract: Collagen-based material is a new class of material based on collage,which is widely used in biomedical,food,cosmetic and other industries due to its excellent properties. In the production process of collagen-based materials,rheological properties are important indicators to evaluate whether it can be prepared. Therefore,the study of rheological properties of collagen-based materials is the key to its large-scale industrial application. In this paper,the effects of cross-linking agent,temperature,concentration,pH,ultrasonic wave and other factors on the rheological properties of collagen-based materials are reviewed. The research progress of the kinetic model of the rheological properties of collagen-based materials is summarized. Finally,the application and development prospects of collagen-based materials in the food field are introduced,which provides theoretical guidance and technical support for the application of collagen-based materials.
