甘南牦牛肉与中国西门塔尔牛肉营养特性对比分析

Comparison and analysis of nutrition characteristics for gannan yak meat and Chinese simmental meat

  • 摘要: 对甘南牦牛肉和中国西门塔尔牛肉中营养成分进行了测定分析,旨在为高品质肉品的开发提供依据及指导消费者合理膳食。结果表明:甘南牦牛肉比中国西门塔尔牛肉蛋白质含量高2.05%(p<0.05),脂肪含量低0.47%(p<0.05),两者总糖、胆固醇含量无显著差异(p>0.05)。甘南牦牛肉比中国西门塔尔牛肉的Fe、Ca、P、VE含量分别高0.74、0.83、7.11、0.12 mg/100 g(p<0.05)。甘南牦牛肉不饱和脂肪酸含量比中国西门塔尔牛肉高4.10%,其中γ-亚麻酸、α-亚麻酸、EPA(二十碳五烯酸)、DHA(二十二碳六烯酸)含量均极显著高于中国西门塔尔牛肉(p<0.01)。甘南牦牛肉总氨基酸、必需氨基酸含量均高于中国西门塔尔牛肉,其中苏氨酸、缬氨酸、异亮氨酸、谷氨酸、胱氨酸、亮氨酸含量均显著高于中国西门塔尔牛肉(p<0.05),两者Ile氨基酸评分分别为81.53和71.17。相较中国西门塔尔牛肉,甘南牦牛肉营养成分的组成和含量更符合消费者对高品质、高营养肉品的需求。 
    Abstract: The nutrients of Gannan yak meat and Chinese simmental meat were determined and analyzed in study,designed to provide the basis for the development of high quality meat and guide consumers to have a reasonable diet.The results showed that: Gannan yak meat protein content was 2.05% higher than Chinese simmental meat( p < 0.05),fat content was 0.47% lower than Chinese simmental meat( p < 0.05),total sugar and cholesterol content had no significant difference between the two samples( p > 0.05),Fe,Ca,P,V_E content were 0.74,0.83,7.11,0.12 mg /100 g higher than Chinese simmental meat,respectively( p < 0.05). Unsaturated fatty acid content of Gannan yak meat was 4.10% higher than Chinese simmental meat,in which content of γ- linolenic acid,α-linolenic acid,EPA and DHA were significantly higher( p < 0.01). Total amino acids and essential amino acid content of Gannan yak meat were higher than Chinese simmental meat,in which Threonine,Valine,Isoleucine,Glutamic acid,Cystine and Leucine were significantly higher( p < 0.05).The amino acid scores of Ile were 81.53 and71.17 respectively.Compared with Chinese Simmental meat,nutrients composition and content of Gannan yak meat were more aligned with meeting consumer demand for higher quality,higher nutritional value of meat.
