鸭儿芹护色工艺条件优化

Optimization of color-protecting process conditions of Cryptotaenia japonica Hassk

  • 摘要: 以新鲜鸭儿芹为原料,利用碱液漂烫和护色剂对鸭儿芹进行护色,根据色泽和质地的感官评分,研究漂烫条件、护色剂种类和护色条件对鸭儿芹护色效果和质地的影响。研究结果表明,碱液漂烫和护色剂处理对鸭儿芹都有较好的护色效果。不同种类不同浓度的护色剂中,0.06%醋酸锌和0.3%植酸护色效果最为显著。鸭儿芹最佳漂烫工艺条件为90℃下1.0%Na2CO3溶液中下漂烫1min;最佳护色工艺条件为pH5的0.3%植酸+0.07%Zn(COOH)2溶液中浸泡20min。在此条件下漂烫和护色,鸭儿芹的色泽和质地最好。 
    Abstract: Fresh Cryptotaenia japonica Hassk was used as raw material, according to the sensory evaluation of color and texture, the effect of blanching conditions, different kinds of color fixative and color- protecting conditions on the effectiveness of color- protection and texture of Cryptotaenia japonica Hassk which had treated by alkali blanching and color fixative was observed in the research. The results showed that alkali blanching and color fixative had a better color protection. The solution of 0.06% of Zn ( COOH) 2 and 0.3% of PA played a significant effect on color protection during different kinds and concentration color fixative.Under the condition of 90℃ and 1. 0% Na 2 CO 3 blanching for 1min, the effect of blanching was the best, when the material was soaked with the color- protecting solution of 0.3% PA + 0.07% Zn ( COOH) 2 under the condition of pH5.0 for 20min, the effect of color- protecting was the best. Under these conditions, the best techniques of protecting color and texture could be obtained.
