啤酒糟蛋白水解物对大肠杆菌抑菌能力研究

Antibacterial activity of Escherichia coli by hydrolyzed from brewer's spent grains protein

  • 摘要: 选择四种蛋白酶制备水解不同时间的啤酒糟蛋白水解物,并分别检测其对大肠杆菌的抑菌能力。结果表明:采用Alcalase水解150min的水解物具有较好的抑制大肠杆菌的能力。然后对这个水解物采用聚酰胺柱层析、离子交换柱层析方法及凝胶柱层析方法进行分离测定,得到分子量约为1392.58u的啤酒糟多肽样品,其对于大肠杆菌的最小抑菌浓度为1%。 
    Abstract: To study the antibacterial activity of Escherichia coli by hydrolyzed from brewer's spent grains protein, four proteases was used in different hydrolysis time and antibacterial ability of hydrolysis was detected.The results showed that hydrolysis had better inhibition ability of Escherichia coli with Alcalase in 150min.Peptides was separated and tested with polyamide column chromatography, ion exchange column chromatography, and gel column chromatography.Molecular weight was about 1392.58u.The minimal inhibitory concentration for Escherichia coli was 1%.
